Ingredients

Scale

Brownie Batter

  • 1/2 cup (115g) unsalted butter
  • 3/4 cup (75g) high-quality cocoa powder
  • 1 cup (200g) granulated sugar
  • 2 large eggs (room temperature)
  • 3/4 cup (95g) all-purpose flour (or gluten-free flour blend with xanthan gum for gluten-free)
  • 1/4 teaspoon salt

Cherry Filling

  • About 24 fresh or jarred maraschino cherries, patted dry

Chocolate Coating

  • 1 1/2 cups (270g) semi-sweet chocolate chips or baking chocolate
  • 1/4 cup (60ml) heavy cream or coconut cream (optional, for ganache coating)

Instructions

  1. Prepare the Brownie Batter: Gently melt the butter, then whisk in the cocoa powder until smooth. Add the granulated sugar, then beat in the eggs one at a time. Fold in the flour and salt until you have a smooth, thick batter.
  2. Bake the Brownies: Pour the batter evenly into a lined baking pan. Bake in a preheated oven at 175°C (350°F) for 18-22 minutes or until a toothpick inserted near the center comes out mostly clean, ensuring fudgy texture. Let cool completely.
  3. Cut and Add Cherries: Cut the cooled brownies into bite-sized squares. Press one maraschino cherry into the center of each piece, gently shaping the brownie around the cherry to form a small “bomb.”
  4. Melt and Dip in Chocolate: Melt chocolate chips with heavy cream (if using) in a double boiler or microwave in short bursts, stirring until smooth. Dip each brownie-cherry bomb completely into the chocolate, ensuring even coverage.
  5. Set and Serve: Place dipped brownie bombs on parchment paper to set. Refrigerate briefly (about 15-30 minutes) to firm the chocolate shell before serving.

Notes

  • Use room temperature eggs to improve batter texture and mix evenly.
  • Do not overbake the brownies; keep them fudgy for the best ‘bomb’ effect.
  • Chill brownie pieces before dipping to help them hold together better.
  • Pat cherries dry to avoid moisture interfering with chocolate coating.
  • Use high-quality chocolate for a smooth, glossy finish and better taste.
  • Can substitute all-purpose flour with gluten-free flour blend plus xanthan gum for gluten-free version.
  • Optional variations include adding nuts to batter, soaking cherries in liqueur, or using white chocolate coating.
