Instructions

  1. Prepare the Asparagus: Trim the tough ends off the asparagus and lightly blanch or steam them for about 2-3 minutes to maintain their vibrant green color and slight crunch. Set aside to cool.
  2. Butterfly the Chicken Breasts: Carefully slice each chicken breast horizontally to create a pocket or open it flat like a book, being gentle to avoid cutting all the way through.
  3. Prepare the Filling: In a small bowl, mix cream cheese with minced garlic, chopped herbs, salt, and pepper. Spread this mixture evenly inside each butterflied chicken breast.
  4. Assemble the Chicken: Place a handful of asparagus spears inside the cheese-spread chicken breasts. Fold or close the chicken around the filling and secure with toothpicks if needed to keep the filling intact.
  5. Cook the Chicken: Heat olive oil in a skillet over medium heat. Sear the stuffed chicken breasts for 4-5 minutes on each side until golden brown. Then transfer them to an oven preheated to 375°F (190°C) and bake for 15-20 minutes, or until the internal temperature reaches 165°F (74°C).
  6. Rest and Serve: Allow the chicken to rest for a few minutes after cooking so the juices redistribute. Remove toothpicks, slice carefully if desired, and serve warm.
