Ingredients

Scale

Essential Ingredients

  • 2 ripe avocados, diced
  • 1 fennel bulb, thinly sliced
  • ½ red onion, thinly sliced
  • ¼ cup fresh cilantro, chopped
  • 1 jalapeño, minced (seeds removed for milder heat)
  • 2 tablespoons fresh lime juice
  • Sea salt, to taste
  • Black pepper, to taste

Optional Ingredients

  • ½ cup cherry tomatoes, halved
  • ½ cup diced mango (for mango twist)
  • Toasted pepitas or chopped walnuts (for extra crunch)
  • Queso fresco or feta cheese, crumbled (for creamy, tangy finish)

Instructions

  1. Prepare the Ingredients: Finely slice the fennel bulb and red onion into thin strips. Dice the ripe avocados into bite-sized pieces carefully to keep their shape. Chop the cilantro and mince the jalapeño, removing seeds if you prefer less spice.
  2. Combine Everything in a Bowl: Place the sliced fennel, onion, diced avocado, minced jalapeño, and chopped cilantro into a medium mixing bowl. If using optional cherry tomatoes or any other add-ins, toss them in now.
  3. Add Fresh Lime Juice and Seasonings: Drizzle fresh lime juice over the combined ingredients. Season with sea salt and black pepper to taste. The lime juice brightens the flavors and helps prevent the avocado from browning.
  4. Gently Toss and Serve: Using a spoon, carefully fold the salsa ingredients together to evenly distribute flavors while preserving the avocado’s shape. Taste and adjust seasoning if needed. Serve immediately for the freshest experience.

Notes

  • Choose ripe avocados that yield to gentle pressure but are not mushy for the best texture.
  • Slice fennel thinly to avoid overpowering crunch and to allow its flavor to blend well.
  • Prepare the salsa just before serving to maintain vibrant color and texture.
  • Store extra lime slices separately to freshen up leftovers before serving again.
  • Adjust the heat by removing or including jalapeño seeds according to your preference.
  • Store leftovers in an airtight container with plastic wrap pressed onto the surface and refrigerate; consume within 1-2 days.
  • Freezing is not recommended as it affects texture and freshness.
  • Do not reheat; serve cold and stir gently before serving again.
