Ingredients

Scale

Chicken and Skewers

  • 1 lb boneless, skinless chicken breast, cut into 1 to 1.5 inch chunks
  • Wooden skewers (soaked in water for 30 minutes before grilling)

Bang Bang Sauce

  • 1/2 cup mayonnaise
  • 1/4 cup Thai chili sauce
  • 2 tablespoons honey
  • 1/2 teaspoon garlic powder
  • 1 tablespoon freshly squeezed lime juice

Optional Garnishes

  • 2 green onions, sliced
  • Chopped cilantro (optional)
  • Sesame seeds (optional)

Instructions

  1. Prepare the Chicken: Cut boneless chicken breasts into evenly sized chunks about 1 to 1.5 inches thick to ensure even cooking and juicy bites.
  2. Mix the Bang Bang Sauce: In a mixing bowl, combine mayonnaise, Thai chili sauce, honey, garlic powder, and freshly squeezed lime juice. Stir until the sauce is smooth and creamy.
  3. Marinate the Chicken: Toss the chicken chunks in half of the prepared Bang Bang sauce to coat evenly. Let them marinate for at least 15 minutes to absorb the flavors.
  4. Skewer the Chicken: Thread the marinated chicken pieces onto the soaked wooden skewers, spacing them slightly for even grilling and airflow.
  5. Grill to Perfection: Preheat a grill or grill pan to medium-high heat. Grill the skewers for 4-5 minutes on each side, until the chicken is cooked through and has nice grill marks.
  6. Coat and Serve: Brush the remaining Bang Bang sauce generously over the hot grilled skewers for a creamy, spicy finish. Garnish with sliced green onions, cilantro, or sesame seeds if desired.

Notes

  • Cut chicken into uniform pieces to ensure even cooking.
  • Soak wooden skewers in water for 30 minutes before grilling to prevent burning.
  • Preheat the grill before placing the skewers for perfect char marks.
  • Remove chicken once opaque and juices run clear to avoid overcooking and maintain tenderness.
  • If sauce is too thick, thin it with a little water or lime juice for easier coating.
