Salmon Bites

  • 1 fresh salmon fillet (about 1 lb), cut into 1 to 1.5 inch cubes

  • 1 tsp garlic powder
  • Salt, to taste
  • 2 tbsp olive oil or cooking spray

Bang Bang Sauce

  • 1/4 cup mayonnaise
  • 12 tbsp Sriracha sauce (adjust to taste)
  • 1 tbsp honey or sweet chili sauce
  • 1 tsp lime juice

Garnish

  • 2 tbsp chopped green onions or chives

Instructions

  1. Prep the salmon: Start by cutting your fresh salmon fillet into bite-sized cubes, about 1 to 1.5 inches. Pat them dry thoroughly with a paper towel to ensure the coating sticks well and the bites crisp up nicely.
  2. Make the bang bang sauce: In a small bowl, mix mayonnaise, Sriracha sauce, honey or sweet chili sauce, and a squeeze of lime juice. Adjust the heat by adding more or less Sriracha depending on your taste preference. Stir until smooth and set aside.
  3. Coat the salmon: Season the salmon cubes lightly with garlic powder and salt. Then, roll each piece in panko breadcrumbs, pressing gently to ensure an even coating that will crunch up beautifully when cooked.
  4. Cook the bites: Heat olive oil in a pan over medium heat. Carefully place the coated salmon bites in the skillet, cooking for about 2 minutes per side, until golden and crisp. Alternatively, bake them in a preheated oven at 400°F (200°C) for 10-12 minutes, flipping halfway through.
  5. Toss and serve: Once cooked, toss the salmon bites in the prepared bang bang sauce until fully coated. Sprinkle chopped green onions or chives on top, and they’re ready to devour!
