Ingredients

Scale

Main Ingredients

  • 1 lb ground beef (80/20)
  • 1/2 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1/4 cup panko breadcrumbs
  • 1 tablespoon Worcestershire sauce
  • Salt, to taste
  • Black pepper, to taste
  • 1/2 teaspoon smoked paprika

For Cooking

  • 2 tablespoons butter
  • 1 tablespoon olive oil

For Gravy

  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour (or gluten-free flour for gluten-free version)
  • 2 cups beef broth
  • Salt, to taste
  • Black pepper, to taste
  • 1/2 teaspoon smoked paprika

Optional Garnish

  • Chopped fresh parsley or thyme

Instructions

  1. Prepare the Meat Mixture: In a large bowl, combine the ground beef, finely chopped onions, minced garlic, panko breadcrumbs, Worcestershire sauce, salt, black pepper, and smoked paprika. Mix everything gently but thoroughly to combine, being careful not to overwork the meat to keep the patties tender.
  2. Shape the Patties: Divide the meat mixture into equally sized portions and shape each into an oval patty about 3/4 inch thick. Uniform patties help cook evenly and present beautifully.
  3. Brown the Patties: Heat butter and olive oil over medium-high heat in a large skillet. Once hot, add the patties and cook for 3-4 minutes per side until nicely browned but not fully cooked through. Browning seals in juices and builds flavor.
  4. Make the Gravy: Remove the patties from the skillet and set aside. Add more butter to the same pan, then whisk in the flour to form a roux. Slowly pour in the beef broth while stirring constantly until the sauce thickens into a rich gravy. Season with salt, pepper, and smoked paprika to taste.
  5. Finish Cooking: Return the patties to the skillet and spoon the gravy over them. Reduce heat to low, cover, and simmer for 10-15 minutes to meld flavors and cook patties through perfectly.

Notes

  • Don’t overmix the beef mixture to keep patties juicy and tender.
  • Properly brown the patties to develop deep flavor before simmering in gravy.
  • Use fresh onions and garlic for vibrant, aromatic flavor.
  • Adjust gravy thickness by adding more broth or flour gradually as needed.
  • Let patties rest in the gravy off heat for a few minutes to lock in moisture before serving.
