Broccoli Shrimp Alfredo

Broccoli Shrimp Alfredo is a quick and easy creamy pasta dish featuring tender shrimp, fresh broccoli, and a rich, garlicky Alfredo sauce. Perfect for a satisfying weeknight dinner that combines protein, vegetables, and a luscious sauce in under 30 minutes.

Ingredients

Scale

Shrimp and Vegetables

  • 1 lb peeled and deveined shrimp
  • 2 cups fresh broccoli florets

Sauce

  • 3 tbsp butter
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese

Pasta and Seasoning

  • 8 oz fettuccine or preferred pasta
  • 2 tbsp olive oil
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prepare the Ingredients: Clean and devein the shrimp, trim broccoli into bite-sized florets, mince garlic, and grate fresh Parmesan cheese. Having everything prepped before cooking ensures a smooth process.
  2. Cook the Pasta and Broccoli: Boil pasta according to package instructions until al dente. During the last 2-3 minutes, add broccoli florets to the boiling water so they soften slightly but remain crisp. Drain together and set aside.
  3. Sauté the Shrimp: Heat olive oil in a large skillet over medium heat. Season shrimp with salt and pepper, then cook until pink and opaque, about 2 minutes per side. Remove shrimp and set aside, keeping the juices in the pan.
  4. Make the Alfredo Sauce: In the same skillet, melt butter and sauté garlic until fragrant but not browned. Slowly whisk in heavy cream and bring to a gentle simmer. Stir in grated Parmesan cheese until melted and smooth. Season with salt and pepper to taste.
  5. Combine Everything: Add cooked pasta, broccoli, and shrimp back into the skillet with the sauce. Gently toss to coat everything evenly. Warm through for 1-2 minutes, allowing flavors to meld and sauce to thicken slightly.

Notes

  • Use fresh or thoroughly thawed shrimp for the best texture and flavor.
  • Cook pasta al dente to better absorb the sauce and maintain a nice bite.
  • Simmer Alfredo sauce gently to prevent curdling or splitting.
  • Grate Parmesan cheese fresh for superior melting and taste.
  • Avoid burning garlic; it should be soft and fragrant.
