Ingredients

Scale

Dough Ingredients

  • 1 cup (227g) unsalted butter, softened
  • 1 cup (200g) brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 1/2 cups (315g) all-purpose flour (or gluten-free blend)
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Filling and Toppings

  • 1/2 cup jam or fruit filling (raspberry, strawberry, apricot, or your choice)
  • Powdered sugar (optional, for dusting or glaze)

Instructions

  1. Prepare the Dough: Cream together softened butter and brown sugar until light and fluffy, then add the egg and vanilla extract, mixing well until combined. In a separate bowl, whisk the flour, baking soda, and salt, then gradually fold the dry ingredients into the wet mixture until a soft dough forms.
  2. Chill the Dough: Wrap the dough in plastic wrap and refrigerate for at least 30 minutes to firm up, which makes it easier to roll and shape.
  3. Roll and Cut the Dough: Roll the chilled dough on a lightly floured surface to about 1/4-inch thickness. Cut into rectangles approximately 3 by 2 inches, aiming for an even number to make pairs.
  4. Assemble the Cookies: Spread a thin layer of jam on half of the rectangles, leaving a small border. Place the remaining rectangles on top, and gently press the edges together with a fork to seal fully.
  5. Bake the Cookies: Preheat oven to 350°F (175°C). Place cookies on a parchment-lined baking tray, spaced apart, and bake for 12 to 15 minutes until edges are lightly golden. Avoid overbaking to keep them soft and chewy.
  6. Add Finishing Touches: Cool cookies completely on a wire rack. Optionally dust with powdered sugar or drizzle with glaze to enhance appearance and add sweetness.

Notes

  • Use room temperature butter for better mixing and smoother dough texture.
  • Keep the jam layer thin to prevent soggy or leaking cookies.
  • Chilling dough helps preserve cookie shape and prevents spreading during baking.
  • Seal edges firmly with a fork for a secure closure that keeps filling inside.
  • Watch baking time closely to achieve a chewy texture; oven times may vary.
