Ingredients

Scale

Dough

  • 3 ½ cups all-purpose flour
  • 1 cup warm milk (about 110°F)
  • 2 ¼ teaspoons active dry yeast (1 packet)
  • 2 tablespoons granulated sugar
  • 1 teaspoon salt
  • 4 tablespoons unsalted butter, melted (for dough)
  • 1 large egg
  • 2 tablespoons fresh parsley, finely chopped
  • 1 tablespoon fresh rosemary, finely chopped
  • 1 tablespoon fresh thyme, finely chopped

Butter Glaze

  • 4 tablespoons unsalted butter, melted
  • 1 tablespoon fresh herbs (parsley, rosemary, thyme), finely chopped (optional)

Instructions

  1. Prepare the yeast mixture: Warm the milk until comfortably warm to the touch (about 110°F). Stir in sugar and active dry yeast. Let sit 5-10 minutes until foamy, indicating the yeast is activated.
  2. Mix the dough: In a large bowl, combine flour and salt. Add the egg, melted butter, chopped fresh herbs, and the yeast mixture. Stir until the dough forms a shaggy mass.
  3. Knead the dough: Turn dough onto a lightly floured surface. Knead for 8-10 minutes until smooth and elastic. This develops gluten for the soft, airy texture.
  4. First rise: Place dough in a lightly oiled bowl. Cover with a clean towel and let rise in a warm spot until doubled in size, about 1 to 1.5 hours.
  5. Shape the rolls: Gently punch down the dough and divide into equal portions. Shape each piece into an oval, fold in half gently, pressing the sides slightly to stick.
  6. Second rise: Arrange shaped rolls on a greased baking sheet, spaced apart. Cover and let rise for 30-45 minutes until puffy.
  7. Bake and butter: Preheat oven to 375°F. Bake rolls for 15-20 minutes until golden brown on top. Immediately brush with melted herb butter for shine and rich flavor.

Notes

  • Ensure milk is warm but not hot to avoid killing the yeast.
  • Proper kneading is crucial for soft, airy rolls with a light crumb.
  • Use fresh herbs for best aroma and flavor.
  • Don’t skip the second rise to keep rolls fluffy.
  • Brush with melted butter right after baking to lock in moisture and enhance flavor.
  • For variations, add roasted garlic, cheese, use whole wheat flour, or choose dairy-free substitutes.
