Ingredients

Scale

Base

  • 1 pizza dough (store-bought or homemade, enough for one 12-inch pizza)
  • 2 tbsp olive oil, divided
  • Salt and black pepper, to taste

Fruit and Meat

  • 2 ripe but firm pears (Bosc or Anjou), thinly sliced
  • 4 oz thinly sliced prosciutto

Cheese and Herbs

  • 4 oz crumbled blue cheese
  • 1 tsp fresh thyme leaves

Optional

  • 1 tbsp honey (for drizzling and enhancing caramelization)

Instructions

  1. Prepare the Pears: Slice the pears thinly and sauté them in 1 tablespoon of olive oil over medium heat until golden and caramelized, about 5-7 minutes. Season with a pinch of salt and drizzle honey toward the end to enhance their natural sweetness.
  2. Preheat Oven and Prepare Dough: Preheat your oven to 475°F (245°C). Roll out pizza dough on a floured surface to your desired thickness and transfer to a pizza stone or baking sheet. Let the dough rest for 10 minutes before baking to prevent shrinking.
  3. Assemble the Pizza: Brush the dough lightly with remaining olive oil. Evenly spread the caramelized pears over the dough, then scatter crumbled blue cheese and torn prosciutto slices on top. Sprinkle fresh thyme leaves and season with black pepper to taste.
  4. Bake the Pizza: Place the pizza in the preheated oven and bake for 10-12 minutes, or until the crust is golden and cheese is melted and bubbly. Monitor closely to avoid burning edges.
  5. Garnish and Serve: Optionally drizzle extra honey or olive oil over the pizza after baking. Let it rest for a few minutes before slicing to allow the cheese to set for cleaner cuts.

Notes

  • Use firm pears like Bosc or Anjou to prevent sogginess during caramelization.
  • Do not overload the pizza with toppings to ensure even cooking and a crispy crust.
  • Using a pizza stone helps achieve a perfectly crispy bottom crust by distributing heat evenly.
  • Allow the dough to rest after rolling out to prevent shrinking during baking.
  • Rest the pizza a few minutes before slicing so the cheese sets and slices hold together well.
