Instructions

  1. Prepare the potatoes: Wash and scrub the potatoes thoroughly, then chop them into bite-sized cubes for even roasting. Pat them dry completely to ensure crispiness later.
  2. Toss with seasoning and oil: In a large bowl, combine the potato cubes with olive oil or melted butter, ranch seasoning mix, garlic powder, onion powder, salt, and black pepper. Toss well until every piece is evenly coated with the seasoning.
  3. Roast to crispy perfection: Spread the seasoned potatoes out in a single layer on a baking sheet lined with parchment paper. Roast in a preheated oven at 425°F (220°C) for 25 to 30 minutes, flipping halfway through to achieve a golden, crispy texture on all sides.
  4. Add cheese and cook further: Remove the baking sheet from the oven and generously sprinkle the shredded sharp cheddar and mozzarella cheese over the roasted potatoes. Return to the oven and bake for an additional 5 to 7 minutes, or until the cheese is melted, bubbly, and slightly golden.
