Chicken
- Bone-in, skinless chicken thighs or breasts (about 1.5 to 2 lbs)

- 2 cups egg noodles

- 1–2 tbsp olive oil for sautéing
- Prepare the Chicken: Place the chicken pieces in a large pot and cover with water or chicken broth. Bring to a gentle simmer and cook until the chicken is tender and fully cooked, about 20-30 minutes.
- Sauté the Vegetables: While the chicken cooks, heat olive oil in a separate pan over medium heat. Add chopped onions, garlic, carrots, and celery, sautéing until softened and aromatic, about 5-7 minutes.
- Combine and Simmer: Remove the cooked chicken from the pot and shred it using two forks. Add the sautéed vegetables, shredded chicken, and fresh chicken broth to the pot. Simmer gently to blend all the flavors together for 10-15 minutes.
- Cook the Noodles: Add the egg noodles during the last few minutes of simmering and cook until just tender, about 5-7 minutes, to retain their chewy texture.
- Season and Garnish: Stir in fresh parsley and thyme, season the soup with salt and freshly ground black pepper to taste. Let the soup rest briefly before serving to deepen the flavors.
