Ingredients

Scale

Protein & Pasta

  • 2 cups cooked shredded chicken (rotisserie or homemade)
  • 8 ounces spaghetti or linguine pasta

Vegetables

  • 1 cup sliced mushrooms
  • 1 small onion, chopped
  • 2 cloves garlic, minced

Sauce Base

  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 2 cups chicken broth
  • 1 cup milk

Cheese & Topping

  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup breadcrumbs

Seasonings

  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon fresh thyme or parsley (chopped)

Instructions

  1. Prepare the pasta and chicken: Cook spaghetti or linguine according to package directions until al dente, then drain. Meanwhile, shred cooked chicken into bite-sized pieces and set aside.
  2. Sauté mushrooms, onion, and garlic: In a large skillet, melt butter and add chopped onions and garlic, cooking until translucent. Stir in sliced mushrooms and sauté until golden and tender, releasing their beautiful earthy aroma.
  3. Make the creamy sauce: Sprinkle flour over the sautéed veggies and stir constantly to form a roux. Slowly whisk in chicken broth and milk, cooking until thick and smooth. Season with salt, pepper, and fresh thyme or parsley.
  4. Combine chicken, pasta, and sauce: Remove sauce from heat and stir in shredded chicken and cooked pasta until everything is evenly coated with creamy goodness.
  5. Assemble and bake: Transfer the mixture to a greased casserole dish. Top with shredded mozzarella and Parmesan cheese, then sprinkle breadcrumbs on top for crunch. Bake in a preheated oven at 350°F (175°C) for 25 to 30 minutes until bubbly and golden.

Notes

  • Use rotisserie chicken to save time and add flavorful, cooked meat with little effort.
  • Don’t overcook pasta; slightly undercook so it won’t become mushy during baking.
  • Make a smooth roux by stirring continuously when adding flour and liquids to avoid lumps.
  • Fresh herbs like parsley or thyme boost the casserole’s flavor and brightness.
  • Let the casserole rest for 5–10 minutes before serving to ease portioning and enhance texture.
