Instructions

  1. Prep Your Ingredients: Thinly slice the chicken breast or thigh, chop the bell pepper, carrot, and scallions, and mince the garlic and fresh chilies. Cook the noodles according to package instructions until just al dente, then drain and set aside to prevent sticking.
  2. Cook the Chicken: Heat a splash of neutral oil in a large pan or wok over medium-high heat. Add the sliced chicken and stir-fry until browned and cooked through, about 5-7 minutes. Remove the chicken from the pan and keep warm.
  3. Stir Fry the Veggies: In the same pan, add more oil if needed. Add minced garlic and fresh chilies first to release their aroma. Then toss in the bell pepper, carrot, and scallions. Stir-fry the vegetables until tender but still crisp, approximately 3-4 minutes.
  4. Combine Chicken and Noodles: Return the cooked chicken to the pan, then add the drained noodles. Pour in soy sauce, a splash of sesame oil, and optional vinegar or sweet chili sauce. Toss all ingredients together over medium heat to coat the noodles and chicken evenly with the sauce.
