Ingredients

Scale

Wet Ingredients

  • 3 ripe bananas (with brown spots), mashed
  • 1/2 cup (113g) melted butter
  • 1 large egg
  • 1 teaspoon vanilla extract

Dry Ingredients

  • 1 1/2 cups (190g) all-purpose flour (or gluten-free flour blend for gluten-free version)
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup (100g) brown sugar

Add-Ins

  • 3/4 cup (135g) semi-sweet chocolate chips

Instructions

  1. Prepare the Bananas and Wet Ingredients: Mash the ripe bananas in a large bowl until mostly smooth, then add melted butter, brown sugar, egg, and vanilla extract. Whisk everything together until fully combined.
  2. Combine the Dry Ingredients: In a separate bowl, sift together the all-purpose flour, baking soda, and salt. This ensures even distribution and smooth texture in the final bars.
  3. Mix the Wet and Dry Ingredients: Slowly add the dry ingredients to the wet mixture, folding gently to avoid overmixing, which could make the bars tough.
  4. Fold in the Chocolate Chips: Gently stir in the chocolate chips, making sure they are evenly distributed throughout the batter for delicious pockets of chocolate.
  5. Bake and Cool: Pour the batter into a greased or lined baking pan and bake at 350°F (175°C) for about 25-30 minutes or until a toothpick inserted in the center comes out clean. Let the bars cool completely before slicing.

Notes

  • Use overripe bananas with brown spots for the best sweetness and moisture.
  • Mix just until combined to keep bars tender and avoid toughness.
  • For thicker bars, refrigerate the batter for 30 minutes before baking.
  • Spread the batter evenly in the pan to ensure uniform baking.
  • Test for doneness by inserting a toothpick; it should come out with a few moist crumbs but no raw batter.
