Scale

Brownie Base Ingredients

  • 200g good-quality semisweet or bittersweet chocolate, chopped
  • 150g unsalted butter
  • 300g granulated sugar
  • 115g all-purpose flour
  • 3 large eggs
  • 1 tsp vanilla extract
  • 2 tbsp cocoa powder (optional)
  • 1/4 tsp salt

Ganache Topping Ingredients

  • 200ml heavy cream
  • 150g good-quality semisweet or bittersweet chocolate, chopped
  • Pinch of salt (optional)

Instructions

  1. Prepare the Brownie Batter: Begin by melting the chocolate and unsalted butter together gently over low heat or in a double boiler, stirring until silky smooth. In a separate large bowl, whisk the granulated sugar and eggs until glossy and well combined. Fold in the vanilla extract. Gradually mix the melted chocolate and butter mixture into the sugar and egg mixture. Sift in the dry ingredients — all-purpose flour, cocoa powder (if using), and salt — and gently fold until just combined to maintain a fudgy batter.
  2. Bake the Brownies: Pour the prepared batter into a baking pan lined with parchment paper, smoothing the surface evenly with a spatula. Bake in a preheated oven at 175°C (350°F) for about 25-30 minutes, watching carefully so the edges set but the center remains slightly soft, ensuring that perfect gooey texture.
  3. Make the Ganache: While the brownies cool, heat the heavy cream in a small saucepan just until it begins to boil. Pour the hot cream over the chopped chocolate in a heatproof bowl. Let it sit for a minute or two to soften the chocolate, then stir gently until the mixture becomes a glossy, velvety ganache. Add a pinch of salt, if desired, to balance sweetness.
  4. Pour and Chill: Carefully pour the ganache over the cooled brownies, spreading it evenly using a spatula. Place the pan in the refrigerator and chill until the ganache is set but still soft enough to cut smoothly without cracking, about 1-2 hours.
  5. Cut and Serve: Use a sharp knife warmed under hot water and wiped dry to slice the brownies into neat squares. Serve at room temperature to enjoy the luscious ganache topping and the fudgy brownie base.

Notes

  • Choose high-quality chocolate for the best flavor impact.
  • Do not overmix the batter to keep brownies dense and fudgy rather than cakey.
  • Use room temperature eggs for easier mixing and a smoother batter.
  • Chill ganache well to achieve a glossy finish and perfect slicing texture.
  • Line the baking pan with parchment paper for easy removal and clean edges.
