Instructions

  1. Prepare the crust: Combine the flour, sugar, and cold butter in a mixing bowl. Use your fingers or a pastry cutter to blend the ingredients until the mixture resembles coarse crumbs. Press the mixture evenly into a lined baking pan to form a sturdy base. Bake at 350°F (175°C) for 15–20 minutes or until the crust is lightly golden and firm.
  2. Make the creamy filling: In a separate bowl, whisk together the ricotta cheese, sugar, eggs, and vanilla extract until smooth and slightly fluffy. If desired, gently fold in mini chocolate chips or chopped pistachios for extra texture and flavor.
  3. Combine and bake: Pour the ricotta filling evenly over the warm crust. Return the pan to the oven and bake for another 25–30 minutes, or until the filling sets and develops a delicate golden top for a creamy yet slightly firm texture.
  4. Cool and serve: Allow the baked squares to cool completely at room temperature, then refrigerate for at least 1 hour to set. Once chilled, cut into even squares. Optionally garnish with powdered sugar, additional chocolate chips, or chopped nuts before serving.
