Ingredients

Scale

Wet Ingredients

  • 1/2 cup (115g) unsalted butter
  • 1 cup semi-sweet chocolate chips
  • 2 large eggs
  • 1 teaspoon vanilla extract

Sugars

  • 3/4 cup granulated sugar
  • 1/2 cup packed brown sugar

Dry Ingredients

  • 3/4 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 1 tablespoon instant espresso powder

Instructions

  1. Prepare Your Ingredients: Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper or lightly grease it. Melt the butter and semi-sweet chocolate chips together using a double boiler or microwave, stirring until smooth and glossy.
  2. Combine Sugars and Eggs: In a large mixing bowl, whisk granulated sugar, brown sugar, and eggs until creamy and light in color, incorporating air to keep brownies moist but not dense.
  3. Add Coffee and Vanilla: Stir the cooled melted chocolate mixture into the sugar and egg blend. Add instant espresso powder and vanilla extract, mixing well to evenly distribute the coffee flavor.
  4. Mix Dry Ingredients: Sift together flour, cocoa powder, and salt in a separate bowl. Gently fold the dry ingredients into the wet mixture, careful not to overmix to maintain tenderness and fudgy texture.
  5. Bake to Perfection: Pour batter into the prepared pan and smooth the top. Bake for 25 to 30 minutes. Insert a toothpick in the center; it should come out mostly clean with a few moist crumbs to ensure the fudgy texture.

Notes

  • Use quality semi-sweet chocolate and cocoa powder for the richest flavor.
  • Do not overmix the batter to avoid tough brownies.
  • Instant espresso powder dissolves quickly without bitterness and best enhances the chocolate.
  • Check doneness starting at 25 minutes to prevent overbaking and dryness.
  • Let brownies cool completely to firm up and develop chewy texture.
  • For nutty twist, add chopped walnuts or pecans before baking.
  • For dairy-free option, substitute butter with coconut oil or vegan margarine.
  • To make vegan, use plant-based butter, aquafaba or flax eggs, and dairy-free chocolate.
  • To reduce sugar, replace granulated sugar with coconut sugar or reduce sugar amounts.
