Ingredients

Scale

Protein and Main Ingredients

  • 1 pound lean ground beef (90% lean or higher)
  • 12 ounces pasta of choice (penne or rigatoni recommended)
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese (freshly grated preferred)

Aromatics and Seasoning

  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt, to taste
  • Freshly ground black pepper, to taste

Optional Ingredients

  • Fresh parsley or basil, chopped (for garnish)
  • Optional: crushed red pepper flakes or chopped jalapeños for spice
  • Optional: sautéed spinach or mushrooms for added vegetables
  • Optional: Greek yogurt to replace part of the heavy cream

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook until al dente according to the package instructions. Drain the pasta, reserving a small amount of pasta water, and set aside.
  2. Sauté Aromatics and Brown Beef: Heat olive oil in a large skillet over medium heat. Add chopped onions and garlic, cooking until fragrant and translucent. Add the ground beef, breaking it up with a spoon, and cook until browned and no longer pink.
  3. Make the Creamy Sauce: Reduce heat to low and pour in the heavy cream. Stir gently to warm it through. Gradually add grated Parmesan cheese, stirring constantly until melted and smooth. Season with salt and freshly ground black pepper to taste.
  4. Combine Pasta and Sauce: Add the cooked pasta to the skillet with the beef and creamy sauce. Toss gently to coat every piece evenly. If the sauce is too thick, add a splash of the reserved pasta water to reach your desired consistency.
  5. Garnish and Serve: Turn off the heat and sprinkle freshly chopped parsley or basil over the pasta for a fresh burst of flavor and color. Serve immediately while warm and creamy.

Notes

  • Use lean ground beef (90% lean or higher) to keep it protein-rich without excess fat.
  • Do not overcook pasta; al dente texture helps it absorb the sauce better.
  • Reserve some pasta water to thin the sauce if needed and help it bind to the pasta.
  • Freshly grated Parmesan cheese melts better and offers more flavor than pre-grated cheese.
  • Check seasoning gradually since cheese and cream add saltiness.
