Easy Homemade Divinity Candy

Easy Homemade Divinity Candy is a classic Southern confection known for its melt-in-your-mouth sweetness, airy fluffiness, and effortless preparation. This no-bake recipe uses simple ingredients like sugar, egg whites, and vanilla to create a timeless treat that is crunchy outside, soft inside, and customizable with nuts or flavors. Perfect for holidays or any special occasion, this candy delights with its nostalgic flavor and light texture.

Ingredients

Scale

Main Ingredients

  • 2 cups granulated sugar
  • 1/2 cup water
  • 1/2 cup light corn syrup
  • 2 large egg whites, at room temperature
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped nuts (walnuts or pecans) – optional

Instructions

  1. Prepare Your Ingredients: Measure all ingredients accurately. Separate the egg whites into a clean, dry bowl to ensure maximum volume when whipped. Have a candy thermometer ready to monitor the syrup temperature precisely.
  2. Make the Sugar Syrup: In a heavy-bottomed saucepan, combine granulated sugar, water, and light corn syrup. Heat over medium while stirring gently until the sugar dissolves. Attach the candy thermometer to the pan side and cook without stirring until the syrup reaches 250°F (hard-ball stage).
  3. Whip Your Egg Whites: While the syrup cooks, beat the egg whites on medium speed until they form soft peaks, avoiding stiff or dry peaks.
  4. Slowly Add Syrup to Egg Whites: With the mixer running on low, very slowly pour the hot sugar syrup into the whipped egg whites to prevent scrambling. Continue beating as the mixture turns glossy.
  5. Beat Until Candy Holds Shape: Increase speed to high and beat until the mixture thickens, becomes lukewarm, and forms firm peaks that hold their shape.
  6. Add Vanilla and Nuts: Gently fold in the vanilla extract and chopped nuts if using, to add flavor and texture.
  7. Shape and Cool: Drop spoonfuls of the divinity mixture onto wax paper or a silicone mat, spacing them well. Let candies cool for about one hour until firm.

Notes

  • Use room temperature eggs for better whipping volume and fluffiness.
  • Use a candy thermometer to ensure syrup reaches the precise 250°F temperature.
  • Pour syrup slowly and carefully to avoid cooking the egg whites prematurely.
  • Make divinity candy on a dry day to prevent stickiness due to humidity.
  • Allow the candy to cool completely to achieve the perfect texture and firmness.
