Instructions

  1. Prepare the Sushi Rice: Cook sushi rice according to package instructions. While still warm, gently mix in rice vinegar, sugar, and salt to season and create the signature sticky, tangy base.
  2. Flake the Salmon: If using cooked salmon, break it into bite-sized flakes after removing skin and bones. For sashimi-grade salmon, dice into small pieces to mix evenly with spicy mayo.
  3. Mix the Spicy Salmon Topping: In a bowl, combine the salmon pieces with mayonnaise, sriracha, and sesame oil. Stir until creamy and well-coated, adjusting sriracha to your desired spice level.
  4. Layer the Bake: Spread the seasoned sushi rice evenly in a baking dish. Layer crab meat or imitation crab over the rice. Then, spread the spicy salmon mixture evenly on top, pressing gently for even layers.
