Shrimp and Sauce

  • Salt and pepper, to taste
  • 2 tbsp fresh parsley, chopped

Cheese Filling

  • 1 1/2 cups ricotta cheese
  • 1 cup shredded mozzarella cheese (divided)
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp fresh parsley, chopped
  • Salt and pepper, a pinch each

Lasagna Layers

  • 9 no-boil or cooked lasagna noodles
  • Additional 1/2 cup shredded mozzarella cheese for topping
  • Additional 1/4 cup grated Parmesan cheese for topping

Instructions

  1. Prepare the Shrimp Scampi: Melt butter in a large skillet over medium heat. Add minced garlic and cook until fragrant but not browned. Add shrimp and cook for 2-3 minutes per side until pink and opaque. Deglaze the pan with white wine or chicken broth. Season with salt, pepper, lemon juice, and lemon zest. Stir well, then remove shrimp from heat and set aside.
  2. Mix the Cheese Filling: In a bowl, combine ricotta cheese, half of the shredded mozzarella, grated Parmesan, chopped parsley, and a pinch of salt and pepper. Mix until smooth and well blended to create a creamy filling that complements the shrimp perfectly.
  3. Assemble the Lasagna Layers: Spread a thin layer of the garlic butter shrimp sauce at the bottom of a baking dish. Layer cooked or no-boil lasagna noodles next, followed by dollops of the ricotta cheese mixture, then a portion of the shrimp with some of the sauce. Repeat layers until all ingredients are used, finishing off with a generous sprinkling of mozzarella and Parmesan cheese.
  4. Bake to Perfection: Cover the dish with foil and bake at 375°F (190°C) for about 25 minutes. Remove the foil and bake for another 10-15 minutes until the cheese is bubbly and golden on top. Let the lasagna rest for 10 minutes before slicing to allow flavors to meld and textures to settle.
