Ingredients

Scale

Steak and Seasoning

  • 1 Ribeye or Sirloin steak (812 oz)
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 2 tbsp Olive oil

Garlic Butter

  • 3 tbsp Unsalted butter
  • 3 garlic cloves, minced

Parmesan Cream Sauce

  • 1 cup Heavy cream
  • 1/2 cup Freshly grated Parmesan cheese
  • Salt and pepper, to taste

Garnish

  • Fresh parsley or thyme, chopped

Instructions

  1. Prepare and Season the Steak: Pat the steak dry with paper towels for a perfect sear. Season generously with salt and freshly ground black pepper on both sides. Let the steak rest at room temperature for about 20 minutes to ensure even cooking.
  2. Sear the Steak to Perfection: Heat the olive oil in a heavy skillet over medium-high heat until shimmering. Add the steak and cook without moving for 3-4 minutes until a golden crust forms. Flip and cook the other side for another 3-4 minutes for medium-rare, adjusting times for thickness and desired doneness.
  3. Create the Garlic Butter: Lower the heat to medium and add unsalted butter to the skillet. Toss in the minced garlic and cook gently for about 1 minute until fragrant but not browned. Spoon the garlic butter repeatedly over the steak to infuse flavor and maintain moisture.
  4. Rest the Steak: Remove the steak from the skillet and place it on a plate. Loosely tent with foil and rest for 5-10 minutes to redistribute juices, ensuring a tender and juicy steak.
  5. Make the Parmesan Cream Sauce: Using the same skillet, reduce heat to medium-low. Add heavy cream, scraping up browned bits from the pan. Stir in freshly grated parmesan cheese until melted and smooth. Simmer gently until the sauce thickens slightly. Season with salt and pepper to taste.
  6. Plate and Serve: Slice the rested steak against the grain. Drizzle generously with the warm parmesan cream sauce and any remaining garlic butter from the pan. Garnish with fresh herbs and serve immediately.

Notes

  • Choose quality steak cuts like ribeye or sirloin for optimal tenderness and flavor.
  • Always let the steak rest after cooking to keep it juicy.
  • Use fresh garlic for the best aromatic garlic butter flavor.
  • Grate parmesan cheese fresh to ensure smooth melting in the cream sauce.
  • Cook the cream sauce on low heat to prevent curdling and maintain a silky texture.
  • A cast iron skillet is ideal for an even, golden crust on the steak.
