Instructions

  1. Prepare the Tomatoes: Wash the tomatoes thoroughly and slice them into even, thick rounds—about half an inch thick to ensure they hold together while frying.
  2. Mince the Garlic: Peel and finely mince fresh garlic cloves. Set aside because this will infuse both the oil and the tomato slices with amazing flavor.
  3. Season and Coat the Tomatoes: Sprinkle salt and pepper evenly on both sides of each tomato slice. Lightly dredge each slice in flour, shaking off any excess to prevent clumping.
  4. Heat the Oil and Garlic: In a wide skillet, heat olive or vegetable oil over medium heat. Add the minced garlic to gently flavor the oil but avoid burning it by stirring constantly for about 30 seconds.
  5. Fry the Tomatoes: Place the floured tomato slices carefully in the hot oil. Fry for 3-4 minutes per side or until golden and crispy. Flip gently to keep the coating intact.
  6. Drain and Serve: Remove the tomatoes with a slotted spatula and place them on a paper towel-lined plate to drain any excess oil. Serve warm and enjoy immediately!
