Ingredients

Scale

Protein

  • 2 cups cooked chicken breast, shredded or cubed

Pasta

  • 8 ounces penne or rotini pasta

Garlic and Butter

  • 2 tablespoons butter
  • 3 cloves garlic, minced

Sauce Base

  • 4 ounces cream cheese
  • 1 cup milk
  • 1 cup grated Parmesan cheese
  • Salt, to taste
  • Pepper, to taste
  • 1 teaspoon Italian herbs (dried or fresh blend)

Cheese Topping

  • 1 cup shredded mozzarella cheese

Instructions

  1. Cook the Pasta and Prepare Chicken: Boil 8 ounces of penne or rotini pasta until just al dente according to package instructions, then drain. While the pasta cooks, shred or cube 2 cups of cooked chicken breast, rotisserie chicken is a convenient option.
  2. Sauté Garlic and Build Sauce: In a skillet over medium heat, melt 2 tablespoons of butter. Add 3 cloves of minced garlic and sauté until fragrant, about 1 minute. Stir in 4 ounces of cream cheese and 1 cup of milk, mixing continuously until smooth and creamy. Add 1 cup grated Parmesan cheese, salt, pepper, and 1 teaspoon Italian herbs; stir well to create the sauce base.
  3. Combine Pasta, Chicken, and Sauce: Add the drained pasta to the skillet with the sauce, then incorporate the shredded chicken. Mix thoroughly to coat all ingredients in the creamy garlic Parmesan sauce.
  4. Transfer to Baking Dish and Add Cheese Topping: Pour the mixture into a greased casserole dish. Evenly sprinkle 1 cup shredded mozzarella cheese on top to form a golden, bubbly crust when baked.
  5. Bake Until Golden and Bubbly: Place the dish in a preheated oven at 375°F (190°C) and bake for 20 to 25 minutes, or until the mozzarella is bubbly and lightly browned. Let the casserole rest for a few minutes before serving to allow flavors to meld and the dish to set.

Notes

  • Use freshly grated Parmesan for better flavor and smoother melting.
  • Undercook pasta slightly to avoid mushiness after baking.
  • Toast garlic lightly and season chicken beforehand for added depth.
  • Cover casserole with foil during baking if top browns too quickly.
  • Let the casserole rest a few minutes after baking for easier serving.
