Ingredients

Scale

Cheese

  • 1 wheel of whole creamy brie cheese (about 8 ounces)

Fruit Topping

  • 1 cup fresh pineapple, chopped into small chunks
  • 1 cup ripe mango, chopped into small pieces
  • 2 tablespoons honey
  • 1 tablespoon fresh lime juice
  • 1/4 cup chopped macadamia nuts (optional)

Garnishes & Serving

  • Fresh mint leaves (optional, for garnish)
  • Crackers, baguette slices, or fresh fruit slices (for serving)

Instructions

  1. Prepare the Fruit Topping: Chop fresh pineapple and mango into small, even pieces. In a bowl, toss the fruit with honey and fresh lime juice to enhance sweetness and add tang. Fold in chopped macadamia nuts if using, for texture.
  2. Preheat the Oven: Preheat your oven to 350°F (175°C) to ensure perfect melting of the cheese.
  3. Prepare the Brie Wheel: Place the whole wheel of brie in an oven-safe dish or on a parchment-lined baking sheet. Optionally, score the top rind lightly to allow fruit juices to seep in during baking.
  4. Add the Tropical Fruit Mixture: Generously spoon the pineapple and mango topping evenly over the top of the brie wheel. The honey-lime glaze will caramelize slightly in the oven.
  5. Bake Until Gooey: Bake the brie in the preheated oven for 15-18 minutes or until the cheese softens and starts to ooze around the edges. Monitor closely to prevent over-melting.
  6. Garnish and Serve: Remove from oven, sprinkle with fresh mint leaves if desired, and serve immediately with crackers, baguette slices, or fresh fruit slices for dipping and spreading.

Notes

  • Use fresh, ripe pineapple and mango for the best flavor and texture.
  • Do not overbake the brie to avoid it becoming too runny.
  • Let brie sit at room temperature for 20 minutes before baking to ensure even melting.
  • Toast macadamia nuts briefly to enhance crunch and flavor.
  • Adjust honey and lime juice to balance sweet and tangy flavors to your liking.
