Ingredients

Scale

Chicken

  • 2 boneless, skinless chicken breasts

Fresh Produce

  • 12 fresh jalapeños, finely chopped (seeds removed to reduce heat if desired)
  • 2 ripe peaches, diced (fresh or frozen)
  • 2 cloves garlic, minced
  • 2 tablespoons fresh cilantro, chopped (for garnish)
  • 1 lime, juiced

Pantry Items

  • 2 tablespoons olive oil
  • 12 teaspoons honey or maple syrup (optional, to enhance sweetness)
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prep Your Ingredients: Wash and finely chop the jalapeños, removing some or all seeds to control the heat. Dice the peaches into bite-sized pieces and mince the garlic. Lightly season the chicken breasts with salt and pepper to enhance their natural flavor.
  2. Cook the Chicken: Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for about 6-7 minutes on one side until golden brown. Flip and cook for another 5-6 minutes until fully cooked through and juices run clear.
  3. Sauté Jalapeños and Garlic: Remove the chicken and set aside. In the same skillet, add a little more olive oil if needed, then add chopped jalapeños and minced garlic. Sauté for about 2 minutes until fragrant and slightly softened, but not browned.
  4. Add Peaches and Finish the Sauce: Stir in the diced peaches, lime juice, and honey or maple syrup if using. Let the mixture simmer for 3-4 minutes, allowing the peaches to soften and the flavors to meld together. Return the chicken to the skillet and coat it with the peach and jalapeño sauce.
  5. Garnish and Serve: Turn off the heat and sprinkle chopped fresh cilantro on top for a bright herbal finish. Serve immediately while warm.

Notes

  • Control the spice: Remove seeds and membranes from jalapeños to reduce heat if preferred.
  • Use ripe peaches: Sweet, juicy peaches make a significant difference in flavor balance.
  • Don’t overcook chicken: Use a meat thermometer to ensure it reaches 165°F (75°C) for juiciness.
  • Let sauce reduce: Simmer the peach and jalapeño mixture enough to thicken and intensify flavors.
  • Rest before slicing: Allow chicken to rest a few minutes after cooking for optimal juiciness.
