Perfect for a satisfying snack, lunch, or dinner, this cheesy, crispy delight offers the flavors of classic Chicken Parmesan in an indulgent grilled cheese sandwich that’s ready in under 30 minutes.

Ingredients

Scale

Chicken

  • 1 to 1 ½ cups cooked shredded or diced rotisserie chicken

Cheeses

  • ¾ cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese

Sauce and Seasonings

  • ¼ cup marinara sauce
  • ½ teaspoon garlic powder
  • ½ teaspoon Italian seasoning

Bread and Butter

  • 4 thick slices of sturdy bread (sourdough or Italian bread recommended)
  • 2 tablespoons butter, softened (for spreading on bread)

Instructions

  1. Prepare Your Ingredients: Shred or chop the cooked chicken into bite-sized pieces. Grate the mozzarella and Parmesan cheeses, and have the marinara sauce ready. Select thick slices of bread that will hold the filling and not get soggy.
  2. Assemble the Sandwich: Spread a thin layer of butter on one side of each bread slice. On the unbuttered side, spread a spoonful of marinara sauce, then layer shredded chicken, mozzarella cheese, and a sprinkle of Parmesan. Top with another slice of bread, buttered side facing out.
  3. Cook to Perfection: Heat a skillet over medium heat. Place the sandwich in the pan and cook for about 3–4 minutes per side, until the bread is golden brown and crispy and the cheese is fully melted. Press gently with a spatula to help the sandwich meld together.
  4. Serve and Enjoy: Remove the sandwich from heat and let it rest for a minute. Cut in half and serve immediately to enjoy the melty cheese, tender chicken, and crispy Parmesan crust.

Notes

  • Use room temperature chicken to help cheese melt evenly and avoid cold spots.
  • Butter the bread generously for a golden, crispy crust every time.
  • Cook over medium-low heat to prevent burning and allow cheese to melt properly.
  • Cover the pan briefly with a lid while cooking to trap heat and melt cheese evenly.
  • Don’t overload the sandwich with too much sauce or chicken to avoid soggy bread.
