  • 1 cucumber, diced

  • 1/2 cup feta cheese, crumbled

Dressing

  • 1/4 cup extra virgin olive oil
  • 2 tablespoons freshly squeezed lemon juice
  • 1 garlic clove, minced
  • Salt, to taste

Instructions

  1. Prepare the Potatoes: Wash the baby potatoes thoroughly. Place them in a large pot of salted water and bring to a boil. Cook until just tender when pierced with a fork, about 12-15 minutes. Drain and cool slightly, then slice into bite-sized pieces.
  2. Chop the Vegetables: While the potatoes cook, halve the cherry tomatoes, thinly slice the red onion, and dice the cucumber. Roughly chop your choice of fresh herbs to release their fragrant oils.
  3. Make the Dressing: In a small bowl, whisk together extra virgin olive oil, freshly squeezed lemon juice, minced garlic, salt, and black pepper until well combined. Taste and adjust acidity or seasoning as desired.
  4. Toss Everything Together: In a large mixing bowl, combine the warm potatoes, tomatoes, red onion, cucumber, Kalamata olives, and fresh herbs. Pour the dressing over and gently toss to coat all ingredients evenly, taking care not to break the potatoes.
  5. Add the Finishing Touch: Sprinkle crumbled feta cheese over the salad and give it one final light toss. Let the salad sit for at least 15 minutes before serving to allow the flavors to meld beautifully.
