Instructions

  1. Prepare the Filling: Cook the chorizo in a skillet over medium heat until browned and cooked through, breaking it into small pieces as it cooks. Remove excess fat if needed. Add diced onions and minced garlic, cooking until softened and fragrant.
  2. Mix in Chipotle Beans and Corn: Stir in the chipotle beans and corn kernels. Let them warm through for a few minutes, allowing the flavors to meld together. Remove from heat and fold in chopped cilantro and shredded Mexican cheese, mixing until creamy and evenly combined.
  3. Assemble the Eggrolls: Place a spoonful of the filling onto each eggroll wrapper. Fold the sides inward and roll tightly to securely encase the filling. Moisten the edges with a little water to seal and prevent unrolling during cooking.
  4. Fry to Perfection: Heat oil in a deep pan over medium-high heat. Fry the eggrolls in batches, turning occasionally, until golden brown and crisp on all sides, about 3-4 minutes. Transfer the cooked eggrolls to paper towels to drain excess oil.
