Instructions

  1. Prep and Sauté Shrimp: Heat olive oil and butter in a large oven-safe skillet over medium heat. Add minced garlic and cook until fragrant, about 1 minute. Add the shrimp seasoned with salt and pepper and cook until just pink, about 2-3 minutes per side. Remove shrimp from skillet and set aside to prevent overcooking.
  2. Cook the Pasta and Prepare Sauce: In the same skillet, add additional garlic if desired and cook briefly. Pour in white wine or broth, stirring to combine and deglaze the pan. Add uncooked pasta and simmer until most of the liquid is absorbed and pasta is slightly firm, about 8-10 minutes. Stir occasionally to prevent sticking.
  3. Combine Ingredients in Pan: Return the cooked shrimp to the skillet. Stir in chopped parsley, lemon zest, half of the Parmesan cheese, and half of the mozzarella cheese. Mix gently to distribute ingredients evenly.
  4. Bake and Finish with Cheese: Sprinkle the remaining mozzarella and Parmesan evenly over the top. Transfer the skillet to a preheated oven at 375°F (190°C) and bake for 10-15 minutes or until the cheese is fully melted and golden brown.
  5. Serve: Remove from oven, let it rest for a few minutes. Garnish with fresh parsley, a squeeze of lemon juice, and extra Parmesan cheese if desired. Serve directly from the skillet or portion into dishes.
