Instructions

  1. Sauté Aromatics and Protein: Heat oil in a large oven-safe skillet or Dutch oven over medium heat. Add chopped onions and garlic and cook until translucent. Then, add the ground beef or turkey, breaking it apart as it cooks until browned and fully cooked. Season with the Mexican seasoning blend.
  2. Stir in Rice and Vegetables: Add uncooked rice, black beans, corn, and diced tomatoes with green chilies to the pot. Stir well to combine evenly with the meat and aromatics.
  3. Pour in Broth and Bring to Simmer: Pour chicken broth over the mixture and stir. Increase heat slightly to bring the mixture to a gentle simmer, then cover the pot and reduce heat to low.
  4. Bake to Perfection: Transfer the covered skillet to a preheated oven at 375°F (190°C). Bake for about 25 minutes or until the rice is tender and has absorbed all the liquid.
