Instructions

  1. Prepare the Feta Filling: Crumble feta cheese into a mixing bowl. If desired, mix in freshly chopped herbs and/or crushed red pepper flakes to enhance flavor.
  2. Assemble the Rolls with Phyllo Dough: Lay one phyllo sheet on a clean surface and brush lightly with melted butter or olive oil to prevent drying. Spoon a small amount of the feta filling near one edge, then roll tightly into a small cylinder. Repeat with remaining sheets and filling. Brush the tops of each roll with beaten egg to promote golden browning.
  3. Oven Fry the Rolls: Place rolls on a baking sheet lined with parchment paper. Lightly spray with olive oil for even crisping. Bake in a preheated oven at 375°F (190°C) for 15 to 20 minutes, or until the rolls are golden and crisp on all sides.
  4. Prepare the Chili Honey: While baking, combine honey and chili flakes in a small bowl. Adjust chili flakes to your preferred spice level.
