Ingredients

Scale

Brisket and Seasoning

  • 1 well-marbled beef brisket (approximately 34 lbs), trimmed
  • 2 tsp smoked paprika
  • 12 tsp salt, to taste
  • 1 tsp black pepper, freshly ground

Cooking Liquid and Aromatics

  • 1 large onion, sliced
  • 34 garlic cloves, minced
  • 23 sprigs fresh thyme
  • 1216 fl oz pumpkin beer (enough to partially cover brisket)

Buns and Cheese

  • 68 pretzel buns, sliced in half
  • Swiss or provolone cheese slices (1 per melt, about 6-8 slices)

Instructions

  1. Prepare the Brisket: Start with a trimmed brisket seasoned generously with smoked paprika, salt, and black pepper. Sear it on all sides in a hot pan to lock in juices and develop a flavorful crust.
  2. Slow Cook with Pumpkin Beer: Transfer the seared brisket to a slow cooker or Dutch oven. Add onions, garlic, fresh thyme, and pumpkin beer so that it partially covers the meat. Cook on low heat for 6-8 hours until the brisket becomes tender enough to shred easily.
  3. Shred and Season: Remove the brisket from the cooker, shred it thoroughly using forks, and mix it back into the cooking liquid to absorb rich flavors. Adjust seasoning if needed and keep warm.
  4. Toast the Pretzel Buns: Slice pretzel buns in half and lightly toast them on a skillet or in the oven until golden and slightly crisp, enhancing the crunch and texture.
  5. Assemble the Melts: Pile shredded brisket onto the bottom half of each toasted bun. Top each with a slice of your chosen cheese and place under a broiler or in the oven just until the cheese melts nicely and bubbles.
  6. Serve and Enjoy: Cover with the top bun and serve immediately, allowing guests to enjoy the warm, smoky flavors and satisfying textures in every bite.

Notes

  • Low and Slow Is Key: Don’t rush the cooking; slow-cooked brisket is juicier and more flavorful.
  • Choose the Right Beer: Opt for a pumpkin-flavored beer with balanced sweetness and maltiness.
  • Toast Buns Just Before Serving: This keeps them from getting soggy and enhances texture.
  • Melt Cheese Under Broiler: For perfectly gooey, bubbly cheese without drying out the brisket.
  • Save the Cooking Liquid: Use it as a warm dipping sauce or to moisten the shredded brisket further.
