Instructions

  1. Prepare the Sushi Rice: Rinse the sushi rice under cold water until the water runs clear to remove excess starch. Cook the rice according to package instructions. Once cooked, gently fold in a mixture of rice vinegar, sugar, and salt to give the classic sushi rice flavor. Allow the rice to cool to room temperature before assembling.
  2. Cook and Prepare the Shrimp: If using raw shrimp, boil or steam until pink and opaque, then cool completely. Pre-cooked shrimp also works well. Peel and devein if necessary. Slice each shrimp in half lengthwise for easier layering.
  3. Slice the Fresh Ingredients: Thinly slice the cucumber and ripe avocado. Choose an avocado that is soft but still firm for a creamy texture without becoming mushy.
  4. Assemble the Stack: Using a round mold or stacking carefully by hand, layer a scoop of sushi rice, followed by avocado slices, cucumber slices, and shrimp. Repeat layers depending on the desired height. Drizzle spicy mayo or your chosen sauce on top and sprinkle with toasted sesame seeds.
  5. Add Garnishes and Serve: Top with pickled ginger, chopped scallions or chives, and a small dollop of wasabi if desired. Serve immediately to enjoy the freshest texture and flavors.
