Instructions

  1. Prepare the Cream Cheese Filling: Beat the softened cream cheese with 2 tablespoons of sugar and ½ teaspoon of vanilla extract until smooth and creamy. Set aside for the cheesecake center.
  2. Mix the Cookie Dough: In a bowl, cream together the softened butter and ¾ cup sugar until light and fluffy. Add the egg and 1 teaspoon vanilla extract, mixing well. Gradually sift in the all-purpose flour, baking powder, and salt; fold gently to combine. Finally, fold in the chopped fresh strawberries or freeze-dried strawberry pieces.
  3. Assemble the Cookies: Take a spoonful of the cookie dough and flatten it slightly in your hand. Place a small portion of the cream cheese mixture in the center, then cover with additional dough, carefully sealing the edges to prevent the filling from leaking out during baking.
  4. Bake to Perfection: Arrange the cookies on a lined baking sheet, spacing them apart. Bake in a preheated oven at 350°F (175°C) for 12-15 minutes or until the edges are golden but the centers remain soft.
