Ingredients

Scale

Bread and Filling

  • 8 thick slices brioche or challah bread
  • 8 oz cream cheese, softened
  • 1 cup fresh strawberries, sliced

Custard Mixture

  • 4 large eggs
  • 1 cup milk or cream
  • 2 tbsp sugar
  • 1 tsp vanilla extract

For Cooking and Garnish

  • 2 tbsp butter (for frying)
  • Powdered sugar, for dusting (optional)
  • Maple syrup or strawberry sauce, for serving (optional)

Instructions

  1. Prepare the cheesecake filling: In a bowl, soften cream cheese until smooth. Gently fold in sugar and vanilla extract to create a sweet, creamy filling that melts perfectly inside the bread.
  2. Slice and stuff the bread: Cut thick slices of bread and carefully slice a pocket into each piece without cutting all the way through. Spoon generous amounts of the cheesecake filling inside, then add sliced strawberries to each pocket for a juicy burst.
  3. Make the custard soak: In a separate bowl, whisk together eggs, milk (or cream), sugar, and vanilla extract until fully combined, creating a smooth custard mixture.
  4. Soak the stuffed bread: Dip each stuffed bread slice into the custard mixture, allowing it to absorb the liquid without becoming soggy. Soak for about 20 to 30 seconds on each side.
  5. Cook to golden perfection: Heat butter in a non-stick skillet over medium heat. Cook each slice of French toast on both sides until golden brown and slightly crisp, while the creamy filling warms inside.

Notes

  • Use day-old bread: slightly stale bread absorbs custard better without falling apart.
  • Don’t overfill the bread pockets to avoid leakage during cooking.
  • Cook on medium to low heat to ensure the inside heats through without burning the exterior.
  • Choose ripe, firm strawberries for the best sweet and juicy contrast.
  • Serve immediately for best texture and flavor, warm and creamy inside with a crisp outside.
