Ingredients

Scale

Vegetables & Herbs

  • 2 cups fresh corn kernels (cut from about 2 ears of corn)
  • 1 ripe avocado, diced
  • 1/4 cup fresh cilantro, finely chopped
  • 1/4 cup fresh basil, finely chopped
  • 1/4 cup fresh parsley, finely chopped
  • 1/4 cup red onion, finely minced
  • 1 cup cherry tomatoes, halved

Dressing & Seasonings

  • 2 tablespoons fresh lime juice
  • 2 tablespoons olive oil
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prepare the Corn: Start by removing the kernels from fresh corn cobs using a sharp knife. Optionally, steam or grill the corn lightly before cutting to add smoky flavor.
  2. Chop the Fresh Herbs and Vegetables: Finely chop the cilantro, basil, and parsley. Dice the avocado and halve the cherry tomatoes. Mince the red onion finely to keep its bite gentle.
  3. Combine Ingredients in a Bowl: In a large bowl, gently toss together the corn, avocado, tomatoes, red onion, and fresh herbs, taking care not to mash the avocado.
  4. Dress the Salad: Drizzle the salad with olive oil and freshly squeezed lime juice. Season with salt and pepper to taste and toss lightly again to evenly coat all ingredients.
  5. Serve Immediately: Serve fresh to maintain the creamy texture of the avocado and crispness of the vegetables. Salad can be chilled briefly before serving if desired.

Notes

  • Use fresh corn for best crunch and flavor; avoid canned or frozen for optimal texture.
  • Choose ripe avocados that yield slightly to gentle pressure for perfect creaminess.
  • Chop herbs just before serving to preserve their bright flavor and aroma.
  • Adjust lime juice and olive oil dressing to keep the salad vibrant without making it soggy.
  • Serve the salad chilled but not too cold to avoid dulling the flavors and textures.
